Maple Meringue Cookies

1 cup pure maple sugar
1 egg white
1/4 cup butter
1/2 cup pure maple sugar
1 egg yolk | 1 tsp. vanilla
3/4 cup flour
1/2 tsp. baking powder
1/4 tsp. salt
Optional: 1/2 cup chopped nuts |
Beat 1 cup pure maple sugar with egg white until smooth and thick. Set aside. Cream butter with 1/2 cup pure maple sugar and 1 egg yolk until smooth and fluffy. Add vanilla, flour and baking powder salt and nuts if desired. Spread dough 1/4 inch thick in 10 inch cake pan. Cover with meringue. Bake 30 minutes at 350F. Cut in squares while warm.
